Banana Split Doughnuts

One of the few things I never really cared about before my allergy diagnosis was doughnuts. I mean, don’t get me wrong – I liked them, but they were nothing special. Cupcakes will always be better than doughnuts, in my mind. BUT – once I had my first allergy-friendly doughnut from Erin McKenna’s a few years back, they became much more exciting. The novelty of actually being able to eat and enjoy a doughnut made it so much more enticing. That’s the thing about allergy-friendly versions of things. They become even more special just because you CAN have them. And since Chicago is like, the city of doughnuts, this is even more important.

Ever since Enjoy Life Foods came out with their baking mixes, I’ve been dying to try using the Muffin Mix to make doughnuts. This was the perfect time! I had some fresh strawberries in the fridge, and some bananas that needed to get used up. And I ALWAYS have a stock of our chocolate on hand for emergencies/every day life. So I decided to go with a Banana Split version to go with my fave theme of dessert for breakfast. Except doughnuts are pretty much just dessert anyways, so I guess just dessert.

Either way, I was whipping these up as Frank Sinatra played on my Pandora station and in my singing and dancing along, I forgot to add the Mini Chips to the first batch (a travesty for sure – not even sure how THAT happened). Then the second batch was not very photo-worthy. But the 3rd batch was perfect. I can’t tell you how the 4th batch turned out because I ended up making a mug cake so I wouldn’t have to re-clean the doughnut pan.

Banana Split Doughnuts

Makes about 22 doughnuts

1 box Enjoy Life Foods Muffin Mix

1 cup + 1 tbsp water

1/4 cup oil

1 tsp pure vanilla extract

2 bananas, mashed

1 tsp cinnamon

Pinch of sea salt

1/2 cup strawberries, chopped

1/2 cup Enjoy Life Foods Mini Chips


  1. Preheat oven to 350˚F and grease a doughnut pan.
  2. Mix the Muffin Mix, water, oil, vanilla extract, mashed bananas, cinnamon and sea salt until evenly combined.
  3. Fill each doughnut mold with batter, and add strawberry pieces and Mini Chips to each one.
  4. Bake for 20 minutes, then remove and let cool.
