It’s National Chocolate Mousse Day! Y’all – I am finally on top of a food holiday for once. And as it just so happens, I was planning on posting this recipe soon anyways, so it’s perfect timing! Honestly, I’m not sure if this counts as pudding or mousse, but we’ll just gloss over that little discrepancy. Either way, it’s chocolate!
I have been on a huge avocado kick lately – like, I’m pretty sure I’ve had one almost every day in one form or another. Either as this mousse, guacamole, or plain and drizzled in hot sauce, sea salt and pepper. I don’t think I’ll ever get tired of them!
This is another one of those recipes that’s delicious and chocolatey, but ALSO kind of healthy. AKA it’s another dessert-for-breakfast recipe. If you’ve kept up with any of these posts, you’ll notice that’s kind of a theme. I absolutely love this recipe plain, but it’s also good with fruit (chocolate + fruit = yum), or extra chocolate (duh). I added Enjoy Life’s Mountain Mambo® Seed & Fruit Mix one time and it was delicious. I used strawberries and cacao nibs in the photos. Cacao nibs are great for everything!
Avocado Chocolate Mousse
Makes 1 serving
1 small avocado
2 tbsp cocoa powder
1-2 tbsp pure maple syrup or honey (depends on how sweet you want it)
1/2 tsp pure vanilla extract
2 tbsp coconut milk or almond milk
A pinch of sea salt
*Optional: 1-2 probiotic capsules
*Optional: 1 tbsp chia seeds
- Blend all ingredients together until smooth.
