Last year for St. Patrick’s Day, I made one of my favorite recipes of all time: BRIGHT GREEN Mint Chocolate Chip Pancakes. They were awesome. And had spinach in them for the color! Bonus.
This year, I decided to keep the healthy ingredient and flavor themes going with my holiday recipe. I got the idea when I was doing recipe testing for work a few weeks back (so fun) and jotted it down so that I’d remember to test it out later. Thus, this Superfood Shake was born. And it’s got a bunch of nutritious ingredients to boot! Here’s just a few of the benefits of these foods:
Avocado: Monounsaturated fats, Vitamin E, Potassium, Fiber, Phytochemicals. Good for your heart, digestion, and brain!
Kale: Anti-inflammatory, Antioxidants, Iron, Vitamins, Fiber, Calcium. See my National Kale Day post for more specifics!
Cacao Nibs: Antioxidants, Flavenoids, Fiber, Magnesium, Potassium, released endorphins. Endorphins make you happy. And as a wise law student once told us, happy people just don’t shoot their husbands. They just don’t.
This recipe is technically a dessert since it’s a shake, but these ingredients all add a nutritional boost, so you can enjoy this dessert for breakfast! And my friend Arman from The Big Man’s World and I will tell you – dessert for breakfast is always a win.
Mint Chocolate Chip Superfood Shake
Makes 1 serving
1 cup water, unsweetened almond milk, or other non-dairy alternative
1/4 tsp mint extract
1 tbsp pure maple syrup
1 handful kale
1 tbsp cacao nibs, plus more for garnish (OR use Enjoy Life Foods Mini Chips or Dark Morsels – or both!!)
*Optional: 1 tbsp grass-fed gelatin or chia seeds
- Blend until smooth.
