So, I have a confession to make: I have hardly cooked anything this year. I know, I know….it’s borderline blasphemous. That’s why I haven’t posted many recipes lately. I’ve been out and about with work and my Enjoy Life trips so I’ve opted for easy dinner solutions when I am home. Anything that takes less time and uses fewer dishes wins out over trying out fancier things (my cookbooks are all crying from disuse).
BUT, just because something is quick and simple doesn’t mean it’s not good! I’ve developed a pretty good little system for making easy, cheap meals that are still yummy. This week, I’ve been having the same thing for dinner every night and it’s just awesome. Probably because it involves 3 of my favorite things to eat: kale, sweet potatoes, and pulled pork. I also made a version with plantains and black beans. Yum.
The other great thing about this meal being so simple is that it’s 100% customizable. All you have to do is layer a bunch of different things and voila, dinner. I have to say, I’m totally jumping on the #teambowls bandwagon after making so many variations of this. Everything is in one spot, and easy to hold on the couch while watching iZombie marathons. What could be better?
Generic Dinner Bowl:
Greens (like kale, spinach, turnip greens, etc.)
Vegetables (whatever you have in your fridge)
Starch/Starchy Vegetable (Sweet potatoes, regular potatoes, rice, etc)
Dinner Bowl of the Week
Makes 1 Serving
A few handfuls of Kale*
A handful of Broccoli Slaw*
Roasted Sweet Potatoes (I used this recipe but cut the potatoes into cubes instead of fries)
~3 oz Pulled Pork
Sea Salt & Pepper to taste
Layer everything in a bowl
2. Zonk it in the microwave.
3. If you’re making the sweet potatoes fresh, add them to the steamed bowl.
4. Add the mayo.
5. I also throw some red pepper flakes in there for good measure.
6. Dig in.
