Cinnamon Roasted Carrots

This is one of my favorite side dishes to make. It’s super easy, and pretty versatile, although it does have a Mediterranean flair. Personally, I love putting cinnamon and cumin on like, everything, so there is that. I would add something witty and entertaining BUT my brain is kind of dead, sooooo I’m gonna bow out on that one ha.

In other news, more snow tonight! Maybe this time Martha Anne and I can finally build a snowman! Fingers crossed.



Cinnamon Roasted Carrots

Makes 4 servings


1 lb carrots, peeled and cut into strips

2 tbsp oil

1 tbsp cinnamon

**Optional: 1 tsp cumin

Sea salt and Pepper to taste

1. Toss the carrot strips, oil, and spices together in a bowl to evenly coat the carrots.

2. Preheat the oven to 400F.

3. Place the carrot strips in a single layer on a lined baking sheet, and put in the oven AS IT HEATS UP.

4. Roast for 20-22 minutes.

5. Let cool and serve
