3-Minute Pumpkin Pie

Sometimes you just want pie. Sometimes you just want pie for breakfast. If I was smart, I would have done this in March 14 but let’s be real, that’s a whole two months away and when the pie calls, you gotta answer it. Am I right?

This breakfast came as a nice change from the pancakes I’d been having a lot in the past couple of weeks. And it was super easy. And pumpkin. Just my style. Even though it’s not fall anymore, pumpkin spice is still 100% acceptable. Agreed? Agreed.

3-Minute Pumpkin Pie

Makes 1 serving

1/2 cup canned pumpkin
1 egg
3 tbsp full-fat coconut milk
**Optional: 1/2 tbsp honey
1 tsp pumpkin pie spice
1/4 tsp cinnamon
1/4 tsp nutmeg
Pinch of sea salt
**Optional: Pecan pieces for garnishing


1. Mix everything together in a microwave-safe mug
2. Microwave for 3 minutes.
3. Top with pecans and let cool.
4. Boom. Done.
