It’s been a while since I’ve made pancakes here in Apt. 2012. Since it’s my birthday, obviously I had to make chocolate ones. AND Martha Anne made me bacon because she loves me. 🙂 Today has been great so far! I’ve been procrastinating on studying and watching SNL. AND since my birthday is on a Sunday this year, I get to enjoy Once and Revenge tonight with my girl Jordan.
I wasn’t sure if this recipe would turn out okay, but I’m glad it did! With a little maple syrup, these babies tasted just like chocolate cake. Yum.
Chocolate Birthday Cake Pancakes
Makes 2 servings
1/4 cup coconut milk (or other non-dairy milk)
1 tsp vanilla
1 tbsp honey
2 tbsp coconut flour
1 tbsp grass-fed gelatin
1 tbsp cocoa powder
1/4 tsp sea salt
coconut oil for the pan
Pure maple syrup
1. Mix the wet ingredients together.
2. Whisk in the coconut flour, gelatin, cocoa and salt, stirring to combine evenly.
3. Heat the oil in a pan over medium heat.
4. Place spoonfuls of batter on the pan, and let cook for 3 minutes. Then flip and cook for another 3 minutes.
